Job Description

: We are currently seeking a talented and experienced Indian Cuisine Chef to join our team at Chokhi Dhani in London. As the Indian Cuisine Chef, you will be responsible for creating authentic and. flavourful Indian dishes, managing kitchen operations and ensuring the highest standards of food quality and presentation. Responsibilities: Menu Development: Develop and innovate Indian cuisine menus that showcase traditional and contemporary dishes, utilizing fresh, seasonal ingredients while maintaining authenticity and staying true to regional flavours. Food Preparation: Oversee all aspects of food preparation, including marinating, seasoning, cooking, and plating Indian dishes such as curries, tandoori items, biryanis, and breads, ensuring consistency and adherence to recipes. Culinary Creativity: Demonstrate creativity and flair in recipe development, presentation techniques, and flavour combinations, while also catering to dietary preferences and special requests from guests. Kitchen Management: Lead and manage kitchen staff, including sous chefs, cooks, and kitchen assistants, by providing training, guidance, and supervision to ensure smooth operations and efficient workflow. Quality Control: Implement stringent quality control measures to uphold food safety standards, hygiene regulations, and portion sizes, conducting regular taste tests and inspections to maintain the highest levels of quality and consistency. Inventory Management: Monitor inventory levels of ingredients, spices, and kitchen supplies, conduct inventory audits, and place orders with suppliers as needed to ensure adequate stock levels and minimize wastage. Cost Control: Manage food costs and kitchen expenses effectively, optimizing ingredient usage, portion control, and kitchen productivity to meet budgetary targets without compromising on quality or guest satisfaction. Collaboration: Collaborate closely with the restaurant management team, including the General Manager and Front-of-House staff, to coordinate menu offerings, special events, and promotional activities, ensuring seamless service and guest satisfaction. Cultural Awareness: Maintain a deep understanding and appreciation of Indian culinary traditions, customs, and regional cuisines, while also staying informed about culinary trends, techniques, and innovations in the industry. Customer Satisfaction: Foster a culture of hospitality and excellence among kitchen staff, promoting teamwork, communication, and a guest-centric approach to ensure an exceptional dining experience for every guest. Qualifications: Proven experience as an Indian Cuisine Chef or Sous Chef in a reputable restaurant, hotel, or catering establishment, with a focus on Indian cuisine. Comprehensive knowledge of Indian culinary techniques, spice blends, and regional specialities, with a passion for authenticity and innovation. Strong leadership and management skills, with the ability to inspire and motivate a diverse kitchen team. Excellent communication and interpersonal abilities, with a focus on teamwork, collaboration, and guest satisfaction. Food hygiene certification and knowledge of health and safety regulations. Flexibility to work evenings, weekends, and holidays as required.
