Menu Program Manager


Role & responsibilities

To develop & provide sites with Region/Segment specific Standard recipes and menus according to the site Dynamics within the baseline costs, working in total alignment with Supply Management and using our Demand Management and Inventory processes that are designed to meet and exceed our customers expectations while using innovative design and efficient cost development .To provide accurate and aggressive food costing to business for new BIDS with view of winning BIDS and achieving budgeted GOPs

Key Responsibilities


  • Development of Standard Recipes
  • Gain efficiency in site Menu costs by way of menu engineering
  • Responsible for food cost of all sites falling under the said manager
  • Support all Segments/Departments with any Job/query related to Food solutions
  • Other Global food Platform requirements to be fulfilled on time to time basis.

Functional Responsibilities


  • Provide sales/BIDS with costings of any menu required for P&L purposes.
  • Developing new recipe in Excel and Microsoft Dynamics as and when required
  • Provide sites with Menu on periodic basis within the baseline costs with help of menu engineering.
  • Assist/coordination with Nutritionist with the data required on the need basis.
  • Determine the Ingredient to SKU relationships for all regions/ sites. Coordinate with Supply Chain Management for Change in SKU
  • To develop GO TO MARKET menus for various regions.

Job Requirements

Qualifications : Degree in Hotel Management

Experience


  • 10+years of experience as a Chef in Hotels or similar Industry
  • Last 5 years as a Chef Manager or Operation Manager in an Industrial Food Solution Company
  • Experience in Making Standard Recipes for an organization
