Job Description

  • To plan and organizes the work of the Commis & Trainees and is responsible for imparting on the job training to the staff

- Proper use of equipment

- Following standardized recipes and right procedure

- Following food safety & handling procedures

  • Should have a copy of the Menu so the mis-en- place has to be done and plan his work accordingly
  • Delegates the job to the team members by breaking down it into different task to be performed
  • Prepare the daily indent for raw materials based on the menus, for established no. of guests & further estimate on the daily basis of experience (forecasting).Supervise and checks daily pickup of stores
  • Ensure that daily sanitation of the work area, storage area, fridges and walk ins is maintained in the liaison with the kitchen steward
  • Brief the team memeber at the beginning of each shift and ensures that they are well groomed, well mannered and they follow safe working practices
  • Assists the Senior Chef in developing standardized recipes by conducting yield tests and innovating new dishes and new styles of presentations and duty roasters
  • Interacts with the outlet guests on a regular basis by suggesting the dishes to them and getting their valuable feedback
  • To checks on every food order, which is executed from the kitchen for correct plate presentations, portion size, taste and garnish
  • Works as a team hands on with his co-workers in his and other departments also
  • Responsible for proper recycling procedures in the kitchen are followed viz.

- Segregation of garbage

- Handling of leftovers

  • Contributes in maintaining the food cost by keeping a tight control on pilferages, over production, wastage due to negligence and improper planing
  • To handle conflicts at junior staff levels by counseling them
