Job Profile:
We are looking for a highly experienced Executive Sous Chef/SousChef-NPD with a strong background in Bread, Sweets, Pastry, or Organic Farm-based food products. The ideal candidate must have hands-on experience in setting up food business or brand outlets, strengthening central kitchen infrastructure, and leading new product development (NPD) initiatives from concept to launch.
Key Roles & Responsibilities:
1.New Product Development (NPD):
- Conceptualize, develop, standardize, and launch innovative bread, sweets, pastry, and organic food products
- Drive recipe development, trials, tasting sessions, and final product approvals
- Create detailed recipe cards, SOPs, yield calculations, and costing sheets
- Lead the expansion and upgradation of the central kitchen from current scale to a large-format production facility.
- Plan kitchen layout, workflow optimization, equipment selection, and capacity enhancement
- Coordinate with vendors, consultants, and management for kitchen setup and expansion
- Ensure compliance with FSSAI, hygiene, food safety, and quality standards
2.Business Setup & Brand Experience:
- Leverage prior experience of setting up own business or brand outlet(s) from scratch
- Support management in scaling production, product consistency, and supply chain readiness.
- Contribute strategically to brand growth, menu engineering, and product positioning
3.Procurement & Vendor Management (Mandatory):
- Handle end-to-end procurement of raw materials, ingredients, packaging, and equipment
- Source organic and specialty ingredients while maintaining quality and cost efficiency
- Develop and manage vendor relationships, negotiations, and contracts.
- Monitor inventory, wastage control, and cost optimization
Candidate Profile Must Have:
- Minimum 12 to 15 years of experience in Bread, Sweets, Pastry, Bakery, or Organic Food Production
- Proven experience of setting up a business or brand outlet (mandatory)
- Strong NPD and recipe development expertise
- Experience in central kitchen setup, expansion, and large-scale production
- End-to-end procurement experience (mandatory)
- Ability to build and lead own team
- Creative mindset with strong commercial understanding
- Comfortable working in a rural organic farm environment
