Job Description
Looking for Executive Chef role for our upcoming hotel - The Fern Residency, Turbhe, Navi Mumbai
Experience : 15 to 20 years
JOB RESPONSIBILITIES:
- Supervision of entire kitchen operations under the direction of executive chef.
- Responsible for maintaining all company documentation form and files related to kitchen.
- Help executive chef for hiring, training, of kitchen employee.
- Control food cost by following proper storage procedure, standardized recipe and waste control procedures.
- Maintain food cost & hygiene standard in kitchen and pot wash area.
- Maintain weekly inventory reports and food cost reports.
- Menu planning, presentation of menu and development.
- Assist executive chef for purchase kitchen material / goods as per requirement.
- Train & educate kitchen staff about international standard of food safety & sanitation.
- Look after the function of executive chef in his absence.
- Ensure all cooks have all necessary ingredients, equipment, and recipe as per companys standard policy.
- Get the feedback about food taste and menu form the guest.
- Train new joiners in kitchen about their job and section and aware them about companies rules and regulation.
- Train cooks about HACCP, and companys standard recipe.
